Mien dong, also known as canna starch noodles or glass noodles, are a type of noodle made from the edible canna plant (Canna edulis Ker). These noodles are a traditional specialty of Vietnam. They are commonly called miến dong in Vietnamese, which translates to “canna noodles”.
It is characterized by long, slender, bright white grains (approx. 8 mm), free from white spots or blemishes, and a naturally sweet pandan aroma. Cooked rice is soft, slightly sticky, and aromatic, and remains tasty and sticky after cooling.
“Bun Gao Xao” translates to “stir-fried rice vermicelli” in Vietnamese. It’s a popular dish featuring thin rice noodles (bún) that are stir-fried with various ingredients, often including meat (like pork or shrimp), vegetables, and a savory sauce. The dish is known for its delicious, savory, and slightly sweet flavor profile, with the noodles absorbing the flavors of the other ingredients and sauce.
